A passionate traveler with a deep appreciation for global diversity, Juanjo loves immersing himself in different cultures, discovering their traditions, customs, and, of course, how fermentation processes are applied in their daily lives. He is a chemical engineer with a PhD in Environmental Chemistry and Technology and a strong advocate for sustainable development. With extensive experience in energy management, water and wastewater treatment, waste management, resource recovery, and energy production from alternative resources, his expertise in sustainability perfectly complements his passion for exploring how diverse cultures approach fermentation.

Whether experimenting with new recipes or perfecting traditional ones, she brings creativity and joy to everything she does. Niky also contributes her expertise and enthusiasm to promote the wonders of fermentation and its diverse culinary possibilities.
